A unique pizza tasting experience, previously popular in Tokyo, Chicago, and Rome, has now arrived in Israel at a small Neapolitan pizzeria called Fabrica in Rehovot. The tasting menu, which focuses solely on dough and cheese, offers a culinary journey that deconstructs and reimagines traditional pizza through six courses, a dessert, and wine for 270 shekels per person.

The concept originated in Italy at Pepe in Grani, near Naples, and has become a global trend over the past year. Oren Amar, the pizzaiolo who opened Fabrica eight years ago, introduced the tasting menu two years ago as a limited event and has now made it a permanent offering served only on Sundays and Mondays. Each evening features two seatings with only four diners per seating, allowing just 16 guests per week to enjoy the experience.

The tasting includes classic Neapolitan pizzas like marinara and margherita, alongside Amar’s signature creations inspired by his personal history and diverse culinary influences from France, Tunisia, and Morocco. Dishes range from pan-baked and fried pizzas to innovative preparations such as the "Kerem Teimanim" pan pizza and the "Medura 2.6," a fried cone delivering a unique bite. The meal concludes with a lemon basil pie crafted specifically for the tasting.

Throughout the meal, diners engage in discussions about pizza origins, key ingredients used at Fabrica, and wine pairings, deepening their appreciation of Neapolitan pizza culture. Despite some opinions that Neapolitan pizza is a fading trend, Fabrica’s tasting menu demonstrates its vibrant and evolving presence in Israel’s culinary scene.

Reservations for this exclusive experience, which begins on July 19, can be made by calling 08-6141480. The pizzeria is located at 203 Herzl Street, Rehovot, and is not kosher.
