Pizza Restaurant in Rehovot Reinvents Dining with Seven-Course Pizza Tasting Menu
Fabrica, a pizza restaurant in Rehovot, Israel, has introduced an innovative seven-course pizza tasting menu that challenges traditional pizza dining. Each dish in the tasting menu features a different type of pizza dough, preparation technique, or interpretation of the Neapolitan pizza tradition, offering diners a unique culinary experience. The meal costs 270 shekels per person and includes unlimited wine and soda throughout the evening.
The tasting menu is served around the bar, allowing guests to observe the chefs at work and hear detailed explanations of each dish. The menu includes a classic Margherita pizza, a fried pizza called "Kerem HaTeimanim" with a crispy base and airy dough, a hybrid fried and baked zucchini flower dish called "Fiori Zucchina," a wood-fired pizza, and a pizza with red pepper. The dessert course also follows the pizza theme with a sweet pizza variation.
Chef and owner Oron Amar explained that the concept is inspired by similar pizza tasting experiences in southern Italy, particularly Naples, where he has attended over eight such meals. He aimed to bring this gourmet pizza culture to Rehovot, providing a fresh and engaging experience for both regular customers and staff. Amar emphasized that the tasting is not fast food but a carefully timed and crafted meal using live sourdough starters.
The restaurant offers only two seating rounds per evening, each accommodating four guests, creating an intimate and focused dining atmosphere. Since announcing the menu, Fabrica has been fully booked with a waiting list extending a year ahead. Amar noted that during tasting sessions, all delivery and takeout services pause to maintain a quiet environment dedicated solely to the tasting experience.
Despite the multiple dough-based courses, Amar assures diners that the meal is not overly heavy, reflecting the restaurant's respect for pizza as a refined culinary art rather than casual fast food.
