A new restaurant named Crudo Lab opened in Herzliya Pituah on Wednesday, offering a unique concept that blends Japanese raw fish techniques with Italian elegance. The establishment is owned by Rachel and Andrea Magi, who also own Italian restaurants globally. Crudo Lab's signature offering is an omakase tasting menu featuring 15 courses of raw fish, oysters, and beluga caviar, priced at 490 shekels per person, excluding drinks.
The extensive tasting menu begins with seven courses of crudo and antipasti, including oysters, tuna with caviar, sashimi, shrimp tartare, and beef tartare. This is followed by three courses of nigiri or sushi, then four hot dishes such as Angus tataki with truffle, tempura shrimp, black cod, and a slider. The meal concludes with a single dessert.
According to a report by Mako, after the concept and pricing were presented, diners received a subsequent message requiring full upfront payment of 490 shekels per person to confirm their reservation. This "ticketing system" model, where customers pay in advance for a specific date and time, is common in high-end restaurants worldwide, particularly those with tasting menus or Michelin stars.
This payment method is often implemented to combat no-shows, which can cause significant financial damage to restaurants by leaving booked seats empty. It also streamlines the dining experience, allowing customers to leave after their meal without waiting for the bill, except for any additional charges for drinks or alcohol consumed.
