Climate change is subtly but steadily changing the taste and texture of fruits and vegetables worldwide. Apples like Pink Lady are losing their crispness and acidity, with future harvests expected to be less crunchy and tangy. This gradual shift, noticeable over decades, also affects other varieties such as Gala, Jonathan, and Granny Smith, which have become softer and sweeter with less sharpness compared to past decades. Similar trends are observed in peaches, watermelons, melons, mangoes, citrus fruits, and field-grown tomatoes, which are becoming sweeter but less aromatic.
The underlying cause is rising temperatures accelerating fruit ripening, disrupting the balance between sugars, acids, and aromatic compounds. As the world warms by about a third of a degree Celsius every decade, harvest times advance slightly, altering flavor profiles. This phenomenon also impacts wine production, with sweeter grapes producing heavier, less acidic wines, challenging traditional wine regions like Bordeaux and Champagne, which may become unsuitable for their signature grapes in 30 years.
Vegetables are affected too, with heat intensifying bitterness and pungency in leafy greens like mustard and arugula, as well as onions, endives, and carrots. Changes in atmospheric carbon dioxide and soil depletion further reduce nutritional value, halving mineral and vitamin content in many crops compared to previous generations.
