IDF Prepares Lavish Rosh Hashanah Meals for Troops Nationwide

The Israel Defense Forces (IDF) has undertaken extensive logistical preparations for Rosh Hashanah, beginning months in advance to ensure all soldiers, from those in fixed bases to those on the front lines in Lebanon, Gaza, Syria, and Judea and Samaria, receive festive holiday meals. The operation involves a massive supply chain to provide for all troops across various operational sectors.

Key food purchases for the holiday include approximately 9.6 tons of honey, 12 tons of apples, 12 tons of pomegranates, 14 tons of vegan cutlets, 15 tons of honey cakes, 35 tons of "Pergiot" (chicken thighs), about 103 tons of fish, and 41 tons of beef. According to Lt. Col. B., head of the IDF Food Branch, the planning and procurement process starts about nine months before the holiday, involving collaboration with the Military Rabbinate, military health officials, and food technology experts to cater to diverse soldier needs.

The holiday meal service is divided into three main tracks. The first involves cooking kitchens within battalions and outposts, preparing holiday staples like fish, meats, poultry, and traditional Rosh Hashanah items such as pomegranates, dates, honey, beets, and apples. This year, clementines were also included as a new seasonal fruit for the "Shehecheyanu" blessing. The second track supports larger kitchens, with pre-cooked items like partially prepared beef purchased to shorten preparation times, especially crucial due to the holiday falling on a weekend.

The third track serves operational areas without cooking facilities, including Lebanon, Gaza, Syria, and specific points in Judea and Samaria. Soldiers in these zones receive full, chilled holiday meals that are heated on-site using holiday-appropriate methods, along with a complete holiday kit including symbolic foods and wine for Kiddush. The IDF aims to allow every soldier, regardless of their location or operational conditions, to observe holiday customs and feel the spirit of Rosh Hashanah.

Special attention is given to dietary requirements and kashrut certifications, with meals prepared under three main kashrut authorities: Badatz Eda Haredit, Badatz Rabbi Landau, and Badatz Mehadrin. When possible, food items are procured with multiple kashrut certifications. Ready-made meals are provided for units unable to meet specific kashrut standards. The preparations also specifically address the needs of religious soldiers, including those in the Hasmonean Brigade's Yonatan Battalion.

The holiday's three-day duration, falling on a Friday, Saturday, and Sunday, presents a unique logistical challenge, particularly for troops in the field. To address this, kitchen equipment and supplies, including Shabbat-compliant heating units, have been augmented. Beyond immediate meal provisions, the IDF maintains emergency stockpiles of frozen meals and other food items to respond to changes in the security situation or large-scale call-ups. Officials emphasize that in prolonged conflict, food serves as a significant morale booster, underscoring the immense planning, resources, and dedicated personnel behind ensuring soldiers can celebrate the holiday.
