Israeli Tips To Keep Bananas Fresh Longer
Israelis enjoy locally grown bananas, often called a 'yellow energy bomb' and a convenient snack. These fruits are rich in minerals and vitamins, including potassium and vitamin C, and provide about 10% of the daily recommended fiber intake per average banana. The primary challenge with bananas is their climacteric nature, meaning they continue to ripen after harvest due to ethylene gas production. This gas breaks down starch into glucose, sweetening the fruit, and also causes the peel to darken.
While this ripening process is beneficial for unripe bananas, it can lead to purchased ripe bananas quickly becoming unappealing. Refrigeration is not ideal, as temperatures below 13 degrees Celsius (55.4 degrees Fahrenheit) disrupt the banana's internal processes, causing the peel to blacken and the flesh to become watery and tasteless, hindering further sweetening.
Optimal storage for bananas is between 12-14 degrees Celsius (53.6-57.2 degrees Fahrenheit), which is difficult to maintain during Israeli summers. A practical method to slow ripening involves separating bananas from the bunch and wrapping their stems, the primary source of ethylene, with foil or plastic wrap. Additionally, keeping bananas separate from other ethylene-producing fruits like apples, pears, and avocados can extend their freshness for a few extra days, typically enough time to consume them before they overripen.
