Chef Ron Yochmananov to Debut New Season of 'Flavors of Shabbat'
The popular cooking show "Flavors of Shabbat" is returning for its fourth season, hosted by chef and content creator Ron Yochmananov. The premiere episode, airing this Friday at 10:00 AM, will feature a festive dish perfect for Rosh Hashanah: stuffed onions with caramelized beets.
This elaborate recipe, requiring significant preparation time of two and a half hours and classified as difficult, involves preparing a filling of ground lamb or beef mixed with freekeh, fried onions, pine nuts, and parsley. The onions are blanched, peeled, and then carefully filled with the mixture before being rolled.
Alongside the stuffed onions, the dish includes caramelized beets, pitted plums, and optional bone marrow for added richness. The components are arranged in a pot with a sauce made from sugar, date syrup or pomegranate molasses, olive oil, and boiling water. The pot is then baked in a preheated oven at 200 degrees Celsius for about an hour and a half, with the onions being basted during cooking. For the final 20 minutes, the lid is removed to allow the onions to brown.
The recipe, presented as a collaboration with Rami Levy, Yona Spices, and Arcosteel, emphasizes that the effort invested in the kitchen is worthwhile for such an impressive result. The dish is served hot, garnished with pomegranate seeds and parsley.
