Chef Ron Yochananov will present a unique savory rice cake recipe on the upcoming "Flavors of Shabbat" cooking show. The dish, which appears to be a dessert at first glance, features a rich filling encased in crispy, golden phyllo dough. This festive creation is designed to be a centerpiece for any meal.
The recipe involves preparing white rice according to package directions. Separately, ground lamb and chicken thighs are sautéed with spices including cumin, turmeric, and nutmeg. Cooked chickpeas and Uzbek raisins are then added to the rice and meat mixture.
The phyllo dough is layered and oiled in a round pan to create a crust with protruding edges. The rice and meat filling is placed inside, and the phyllo edges are folded over to enclose it, forming a cake. The rice cake is then baked at 190 degrees Celsius (375 degrees Fahrenheit) for approximately 30 minutes until golden brown.
