Chef Ron Yochannnov Revives "Flavors of Shabbat" With Stuffed Onions
The popular cooking show "Flavors of Shabbat" returns for its fourth season, hosted by chef and content creator Ron Yochannnov. The premiere episode, airing tomorrow, Friday, at 10:00 AM, will feature a festive dish of stuffed onions alongside caramelized beets, perfect for Rosh Hashanah.
Yochannnov's recipe involves preparing large onions by boiling them until tender, then carefully separating their layers. These layers are then filled with a mixture of ground lamb or beef, pre-cooked frikeh (or partially cooked rice), fried onions, toasted pine nuts, parsley, and spices like cumin or ras el hanout. The stuffed onions are then arranged in a pot with pitted plums, beets cut into wedges, and optional bone marrow bones.
A sauce made from sugar, date syrup or pomegranate molasses, olive oil, and boiling water is poured over the ingredients. The pot is covered and baked for approximately 1.5 hours at 200 degrees Celsius (392 degrees Fahrenheit), with the onions being basted during cooking. For the final 20 minutes, the lid is removed to allow the onions to brown. The dish is garnished with pomegranate seeds and parsley before serving hot.
