Tel Aviv's Acclaimed 'Shila' Restaurant Earns High Marks After Relocation
The well-established and upscale Tel Aviv restaurant 'Shila' has recently opened its new location within the 'Isrotel Gimonia' hotel, situated in the heart of the city's nightlife district. Food critic Niv Glazman, a previous high scorer of the restaurant, revisited 'Shila' to assess if the move has maintained its culinary excellence.
The dining experience commenced with a house-baked sourdough bread served alongside a mild 's'chug' aioli and a tomato salsa, both described as perfect. The first course featured an amberjack sashimi with figs. The caramelized fig, combined with a lemon dressing, created a harmonious balance with the raw fish, allowing the fish to remain the central element despite the strong flavors of the other components.
Next, a jospere-cooked brain dish arrived, accompanied by lemon butter, paprika, capers, and cilantro. This dish was noted for its exceptional balance, with the brain successfully maintaining its prominence as the star ingredient, even with the surrounding elements that could have easily overpowered it.
For the main course, 'forketta', an Italian meat roulade with lamb, was served with 'lachoch' (a Yemeni flatbread) and mango yogurt. The forketta itself was successful, and its pairing with the Yemeni bread added a playful and interesting dimension to the dish.
Dessert was a 'Summer Apricot' creation, which maintained the meticulous aesthetic that characterized all the dishes. The dessert was also praised for its taste. Glazman concluded that 'Shila', after a long time without enjoying food that is both sophisticated and delicious, has maintained its status as one of the best restaurants, awarding it a score of 9 out of 10.
