Chef Ron Yohanannov Reveals Surprising Savory Rice Cake Recipe
Chef Ron Yohanannov will unveil a unique savory rice cake recipe on the upcoming episode of "Flavors of Shabbat." The dish, which appears to be a dessert at first glance, features a crispy phyllo dough exterior encasing a rich filling.
The recipe involves preparing a base of basmati or Persian rice according to package directions. Separately, ground lamb and chicken thighs are sautéed with spices including cumin, turmeric, and nutmeg. Red or white onions, carrots, chickpeas, and Uzbek raisins are then added to the meat mixture.
To assemble the "cake," layers of phyllo dough are brushed with oil and arranged in a pot to form a shell with protruding edges. The rice and meat filling is placed inside, and the phyllo edges are folded over to create a sealed cake. The dish is then baked at 190 degrees Celsius (375 degrees Fahrenheit) for approximately 30 minutes until golden brown, before being inverted onto a serving plate. It is suggested to garnish with chopped parsley and pomegranate seeds.
