Israeli Team Aims for World Barbecue Title with 200kg Wagyu Shawarma
An Israeli team will compete for the first time in the Al Frugoni Open Fire Meat Up barbecue competition in Texas on October 24th. The event, now in its fifth year, features live fire cooking only and draws approximately 700 pitmasters and influencers from around the globe, with around 40 teams participating this year, including those from the US, Argentina, Guatemala, Germany, Australia, New Zealand, and Israel.
The Israeli team's entry will be a 200-kilogram (440-pound) Wagyu beef shawarma, prepared on a custom-built, truck-transported iron apparatus. The meat will be sourced from a kosher supplier in Texas, ensuring the dish is kosher, a decision made to honor the team members and represent Israel appropriately. Team captain Reuven Maislos, a prominent Israeli meat blogger with over 600,000 Instagram followers, aims to showcase Israeli and Middle Eastern cuisine on an international stage.
Maislos emphasized the importance of presentation, stating, "Everything has to look a million dollars." The team will also bring tahini, amba, schug, and spices from Israel to prepare their accompaniments. They hope to serve the shawarma with arak shots and play Israeli music, potentially featuring Omer Adam, to enhance the experience.
Addressing potential claims of culinary appropriation, Maislos defended the team's choice, stating that shawarma has become an integral part of Israeli culinary identity, despite its origins being debated among various cultures. He highlighted that Israel is the fourth-largest consumer of meat globally and that Israelis have a strong affinity for grilling.
Despite potential political sensitivities, Maislos expressed optimism, recalling positive interactions with international attendees at previous festivals. He believes their unique dish and presentation will impress the judges and audience, hoping for a warm reception in Texas, a region he believes is generally receptive to their flavors. The team is prepared to handle any potential demonstrations, focusing on delivering a strong performance.
