Record Cottage Cheese Demand Sparks Shortage Warnings

Israel experienced record demand for cottage cheese in the first half of 2026, leading the Dairy Council to warn of potential localized shortages. During this period, approximately 830.5 million liters of milk were produced, a slight increase of 0.5% compared to the same period last year, according to data released by the Dairy Council ahead of the Rosh Hashanah holiday. The country has around 600 dairy farmers.

The Dairy Council and dairies are preparing for the High Holidays, a time when production days are reduced while demand for fresh products significantly increases. This year, they specifically geared up to manage the heightened demand for cottage cheese during this period.

Additionally, the sheep farming sector saw a significant change with the signing of a multi-year agreement between the Dairy Council, sheep farmer organizations, and government ministries. This agreement permits the import of sheep cheeses from abroad without tariffs and includes a five-year support program for sheep farmers.
