New Honey Cookie Recipe Offers Festive Rosh Hashanah Treat
A new recipe for "Duvshaniyot" (honey cookies) inspired by the Rosh Hashanah holiday has been released, allowing home bakers to create approximately 60 festive treats. The cookies, developed by the Atlan couple, feature a crisp citrus-scented dough base, a soft honey filling spiced with cinnamon and cardamom, and a shiny orange-honey glaze.
The recipe details the construction of the cookie in three layers: a base made from flour, salt, cold butter, lime and orange zest, powdered sugar, almond flour, and egg; a filling composed of flour, baking powder, baking soda, cinnamon, cardamom, salt, honey, dark brown sugar, melted butter, eggs, and orange zest; and a glaze of powdered sugar, orange juice, and honey.
Instructions involve preparing the dough by processing ingredients until crumbly, adding sugars and almond flour, then the egg, before flattening, chilling, cutting circles, and baking. The filling is made by combining dry ingredients, then mixing warmed honey, butter, and sugar with eggs, before combining wet and dry components and piping onto the baked bases. A second baking period follows, after which the cookies are glazed.
The Atlan couple's "Duvshaniyot" are part of a holiday package for the new year, emphasizing traditional Rosh Hashanah flavors of honey and citrus in a refined pastry version. The article also includes a contest where readers can share photos of their attempts for a chance to win a dinner for two at the upscale Asian restaurant Miyuka in Mamilla, a gift from Channel 7's food section.
