Tel Aviv's Sich Bar-Restaurant Revives Grandmother-Inspired Skewers and Childhood Flavors
Sich, a new bar-restaurant in Tel Aviv's Florentin neighborhood, offers a unique dining experience far beyond a typical skewer joint. Originating as a successful pop-up by the culinary collective "Brula," Sich has become a permanent venue emphasizing dishes inspired by the grandmothers of the chefs, served in ceramic ware crafted by their mothers. The menu features grilled items prepared on a Japanese grill in an open kitchen-bar setting, with a strong focus on evoking childhood memories through traditional flavors and fermentation techniques.
The Brula team, Aly Peretz, Ido Ben Hefer, Nir Barak, and Ilai Peretz, trained under chef Eyal Shani and previously organized farm-to-table events. Sich is their first full restaurant, offering an inventive menu with categories such as "Openers" (small bites honoring each partner's grandmother), vegetables and starches, small plates, hot grill items, and "Nose to Tail" cuts, alongside three dessert options. Prices range from 22 to 112 shekels for plates, with cocktails like Negroni Bitter Likutim and Dirty Martini priced at 52 shekels.
Dishes include ricotta mousse tartlets, pumpkin-stuffed shishbarak, fermented kohlrabi, aged beef tartare hand-rolled in vine leaves, and a "Tears Sweetened" burger served in focaccia with caramelized onions. The menu also highlights seasonal ingredients, herbs, flowers, and fermented vegetables and fruits. The intimate space seats 12 at the bar and a few tables, where diners can interact with the chefs preparing the food.
Sich operates Wednesday to Thursday from 18:00 to 23:00, Friday 12:00 to 17:00, and Saturday 12:00 to 23:00 at HaMaon 5, Florentin Quarter, Tel Aviv. The restaurant is not kosher. This innovative spot combines nostalgia with modern culinary creativity, offering a heartfelt and affordable dining experience in Tel Aviv's vibrant food scene.
