One-Pot Shabbat Meal Combines Juicy Chicken with Fresh Salads and Homemade Flatbread

מאת הדר אליאס

The story · English

This Shabbat meal centers around a single pot dish of chicken thighs cooked with quinoa and noodles, seasoned with curry, turmeric, and sweet paprika for a comforting and flavorful main course. The recipe, shared by Ruti Oliver, involves sautéing onions and garlic, adding chicken cubes, then cooking everything together with noodles and quinoa for about 30 minutes, resulting in a hearty dish that can also serve as leftovers for the week.

Accompanying the main dish are two complementary salads: a cherry tomato and olive salad dressed simply with olive oil and minimal seasoning, best prepared just before serving to maintain the tomatoes' texture; and a refreshing cucumber and avocado salad with a slightly spicy, sour, and sweet dressing, also recommended to be made shortly before the meal to keep the avocado fresh.

Homemade flatbreads baked at high heat until puffed and slightly charred provide a soft and flexible way to scoop up the chicken, salads, and a side of green beans cooked in a rich tomato sauce with onion, garlic, and paprika. This green bean dish can be made a day ahead, as the flavors deepen over time.

For dessert, a chocolate yeast cake made with oil instead of butter offers a moist, rich treat that resembles bakery-quality pastries. It can be prepared in advance and enjoyed with Shabbat morning coffee.

This meal plan emphasizes ease and flavor, allowing cooks to focus on other Shabbat preparations while serving a satisfying and balanced spread.
