Quick One-Hour Shabbat Dinner Featuring Salmon, Pasta, and Fresh Tomato Salad

מאת ירדן וייס

The story · English

A new Shabbat dinner menu has been designed to be prepared and served within one hour, ideal for those who want a delicious meal without spending hours in the kitchen. The meal includes a fresh tomato salad, classic Italian pasta aglio e olio, baked Dijon mustard salmon, and a homemade Lotus cookie ice cream dessert.

The tomato salad highlights the importance of using high-quality, fresh summer tomatoes and should be prepared just before serving to maintain its crispness. It takes about 10 minutes to make and is best enjoyed with store-bought pastry to soak up the flavorful dressing.

The pasta aglio e olio requires only four ingredients, olive oil, finely chopped garlic, fresh chili, parsley, and Parmesan cheese, and takes about 15 minutes to prepare. A key tip is to reserve some pasta cooking water to create the sauce.

The salmon dish demands a bit more attention to ingredient quality. A good salmon fillet is coated with a mixture of Dijon mustard, crushed garlic, olive oil, lemon juice, and optionally silan (date syrup), then baked. The mustard forms a protective crust that keeps the fish juicy and aromatic, ready in about 30 minutes.

The only part needing prior planning is the Lotus cookie ice cream dessert, which requires about 10 minutes of preparation earlier in the day or the day before. It involves whipping cream, condensed milk, mascarpone, crushed Lotus cookies, and melted Lotus spread, then freezing the mixture. This dessert can be stored for up to two weeks but is likely to be eaten sooner.

This meal plan offers a flavorful, satisfying Shabbat dinner with minimal kitchen time, perfect for warm weather when spending long hours cooking is less appealing.
