Quick One-Hour Shabbat Dinner Featuring Salmon, Pasta, and Fresh Tomato Salad

מאת ירדן וייס

The story · English

A new Shabbat dinner menu has been designed to be prepared and served within one hour, ideal for those who want a delicious meal without spending hours in the kitchen. The meal includes a refreshing tomato salad, a classic Italian pasta dish, baked salmon with Dijon mustard, and a homemade Lotus cookie ice cream dessert.

The tomato salad highlights the importance of using high-quality, fresh summer tomatoes and is best prepared just before serving to maintain its crispness. It takes about 10 minutes to make and pairs well with store-bought pastry for dipping in the flavorful dressing.

The pasta dish, Aglio e Olio, requires only four ingredients and about 15 minutes to prepare. Key to its success is using excellent olive oil, fresh garlic, chili, parsley, and Parmesan cheese, along with reserved pasta cooking water to create the sauce.

The salmon fillet is coated with a mixture of Dijon mustard, crushed garlic, olive oil, lemon juice, and optionally silan (date syrup), then baked. This method protects the fish from drying out and results in a juicy, aromatic crust, ready in about 30 minutes.

The only dish requiring some advance planning is the Lotus cookie ice cream. It needs about 10 minutes of preparation time and can be made hours or even a day before serving. The recipe involves whipping cream, adding condensed milk and mascarpone, folding in crushed Lotus cookies and melted Lotus spread, then freezing. The dessert is creamy, sweet, and can be stored in the freezer for up to two weeks.

This menu offers a balanced, flavorful Shabbat meal that minimizes kitchen time while maximizing taste and presentation.
