Israeli food critic Hillel Atlan recently dined at Côte, a two-Michelin-starred restaurant in Bangkok’s Capella Hotel, led by renowned chef Mauro Colagreco. Colagreco, whose flagship restaurant Mirazur was ranked the world’s best in 2019, offers a refined French-Mediterranean tasting menu that emphasizes seasonal ingredients and culinary precision. The restaurant does not provide a traditional menu; instead, diners receive a Carte Blanche tasting menu tailored to the season and guest preferences.

Atlan praised the meal’s consistency and elegance, highlighting standout dishes such as a sea urchin tart with roe, a pumpkin tart with Taleggio cheese, and a bread served with ginger and lemon-infused olive oil based on Colagreco’s grandmother’s recipe. The kitchen’s approach focused on letting high-quality ingredients shine rather than relying on flashy techniques.

The only disappointment came from one fish dish, where the dominant fish flavor clashed with other components. However, the staff promptly replaced it with a perfectly cooked alternative without hesitation, demonstrating exceptional hospitality. Other dishes, including a veal fillet with peas and river beans, and desserts like pear with grapefruit and jasmine sorbet and a creative strawberry and rhubarb dessert, impressed with their balance and creativity.

The meal concluded with generous petit fours and a gift of the signature olive oil, underscoring the restaurant’s attention to detail. Atlan rated the experience 8.5 out of 10, noting that while he wished for a bolder culinary moment, the overall precision and hospitality justified Côte’s two Michelin stars. The tasting menu costs approximately 950 shekels per person.
