Israeli Startups Pioneer Spirulina and Yeast Fusion to Revolutionize Sustainable Food

A promising innovation in sustainable food production is emerging from Israeli and French startups aiming to combine spirulina, a protein-rich microalga, with flavor-enhancing yeast to create a perfect meat alternative. Spirulina, a single-celled organism thriving in warm, calm waters like those in the Arava desert, is known for its high protein content and unique spiral structure that mimics animal protein texture. However, its natural green color and strong taste have limited its culinary appeal.

In Raanana, Israel, the company Simpligood cultivates spirulina in controlled greenhouses, processing it gently to preserve its texture while removing its characteristic algae odor. Despite this, the challenge remains to replicate the complex flavors of meat, which industrial marinades fail to achieve. Meanwhile, in Paris, the Mediterranean Food Lab (MFL), a startup born from Tel Aviv’s Brut restaurant, is developing yeast strains that produce meat-like broths instead of alcohol, using advanced microbiology and artificial intelligence to create natural, scalable flavor solutions.

Although Simpligood’s spirulina-based schnitzels briefly appeared on the market in 2023 and MFL’s meat broths are showcased at international food tech conferences, the two companies have yet to collaborate. Their potential partnership symbolizes a broader food tech revolution that leverages natural biological processes rather than synthetic additives to address global challenges such as hunger, environmental degradation, and climate change.

The founders, including marine biologist Baruch Dach of Simpligood and chefs Yair Yossefi and Omer Ben Gal of MFL, represent a new wave of innovators blending science and culinary art. Their work hints at a future where food production is more sustainable, efficient, and aligned with nature’s own mechanisms. While still in early stages, this approach could dramatically reduce resource consumption compared to traditional agriculture and even strict vegetarian diets, marking a significant step toward solving some of humanity’s most pressing problems.
