Top Chefs Launch High-End Restaurants in Boutique Hotels Across Israel

A growing trend among Israeli chefs and culinary groups is to open high-end restaurants within boutique hotels, elevating the dining experience beyond just hotel guests. This movement began several months ago with venues like "Bal Ami" in the Reception Hotel in Tel Aviv's Dizengoff Square, followed by "Palt" in Haifa's Bazaar Hotel by the Fattal Group, and "Bau" by chef Tomer Tal at the De George Hotel in Tel Aviv.

The trend benefits all parties: chefs gain prestigious locations, hotels enhance their appeal with quality dining, and visitors may become future hotel guests. Recently, Club Marine by chef Avi Biton and the Popular Group opened at the De Yacht Hotel in Herzliya, with an upcoming opening of chef Haim Cohen’s restaurant at the new Isrotel Dizengoff 99 Hotel in Tel Aviv.

Looking ahead, the Lilienblum Hotel by the Fattal Group is set to open in March 2027 with a new chef-driven restaurant, though the chef’s identity remains undisclosed. Chef Amos Hayun plans to open a kosher meat restaurant at the De Jaffa Hotel in Jaffa, while the upcoming Platin Hotel, also by Fattal, will feature a new restaurant by the Kiso Group in December 2026.

In Rishon Lezion, a new chef-led restaurant will open in the boutique Rafael Hotel, located in a historic 19th-century building on Rothschild pedestrian street. Herzliya’s new Isrotel hotel, Publica, will soon host a Thai restaurant by Yariv Melili, expected to open around the upcoming holidays.

The Fattal hotel chain leads this culinary expansion with nine active hotel restaurants and two more in development. As Asaf and Nadav Fattal, co-CEOs of Fattal Hotels, stated, "A hotel is much more than a place to stay; it is where hospitality, cuisine, culture, and design come together for a complete experience. An excellent restaurant is not just a service for hotel guests but a destination in its own right."
