Tel Aviv Japanese Restaurant TYO Celebrates 13 Years of Stability
The Japanese restaurant TYO in Tel Aviv is celebrating its 13th anniversary, maintaining a remarkably stable menu that has largely remained unchanged since its opening. In contrast to the fast-paced culinary scene in Tel Aviv, which constantly chases new trends, TYO has opted for consistency, with most of its nearly 100 dishes remaining the same for over a decade. Owner Roai Leon attributes the restaurant's success to this stability, emphasizing that customers can rely on finding their favorite dishes tasting exactly as they remember.
Leon explained that the consistency is partly due to long-term foreign chefs who stay for five-and-a-half-year periods, meticulously preparing the same dishes. This approach, he noted, provides a significant advantage over establishments that frequently change local kitchen staff. He further elaborated that the menu has only expanded over time, with original dishes preserved and new ones added, contrasting this with the local culinary scene's constant flux in ingredients and staff, which can lead to stagnation.
TYO offers several signature dishes, including tuna and foie gras nigiri and a popular tuna yukke salad. The restaurant also serves high-quality sashimi, such as hamachi with caviar, truffle oil, ponzu, and chili. The black cod, priced at 198 shekels, is highlighted as the most expensive item on the menu and a long-standing classic. The review noted that while the main courses and sushi are exceptional, the dessert menu could benefit from some innovation to match the high standard of the rest of the offerings.
Despite the minor critique regarding desserts, the overall assessment is that TYO remains an excellent Japanese restaurant and one of the best sushi establishments in Israel, proving that innovation is not always necessary for sustained success.
