The Japanese restaurant TYO in Tel Aviv is celebrating its 13th anniversary, maintaining a remarkably stable menu with most dishes unchanged since its opening. In contrast to the fast-paced, trend-driven culinary scene in Tel Aviv, TYO's strategy focuses on consistency, allowing customers to reliably enjoy their favorite dishes.
Owner Roai Leon attributes this stability to the retention of foreign chefs who stay for extended periods of five and a half years, ensuring meticulous adherence to original recipes. This approach contrasts with the frequent staff turnover often seen in Israeli kitchens, which Leon views as a significant advantage for maintaining brand consistency.
Leon explained that the menu, which features nearly 100 items, has only expanded over the years, with no original dishes removed. He emphasized that this stability allows the restaurant to operate smoothly, unlike local kitchens that constantly chase changing ingredients and staff. TYO, he stated, is not chasing trends but rather maintaining a high-level operation from a comfortable position.
The menu includes signature dishes like tuna and foie gras nigiri and a popular tuna yukke salad. The restaurant also offers high-end sashimi, such as hamachi with caviar, truffle oil, ponzu, and chili. While the main courses and sushi are highly praised for their freshness and precision, the dessert selection was noted as a weaker point, potentially benefiting from some innovation to match the quality of the rest of the menu.
