Therefore, it is inaccurate to generalize that sprouting either increases or decreases protein universally.

Rozman also tempers the hype around sprouts as "superfoods." For example, broccoli sprouts contain sulforaphane, a compound linked to cancer risk reduction, but the typical serving size of sprouts is much smaller than regular vegetables, resulting in lower overall antioxidant intake.
