Israeli food blogger Shir Chip Ashkenazi shares a fast and simple recipe for homemade pickles that can be prepared in just minutes. Unlike traditional methods that require days, this quick-pickle technique allows you to enjoy crunchy and flavorful pickled vegetables such as purple onions, white cabbage, and cucumbers almost immediately. The recipe was developed a few years ago out of a need for speed and has since become her preferred method for pickling.

The preparation involves slicing 7-8 firm cucumbers thinly, ideally with a mandoline for uniformity, then boiling a mixture of one cup water, one cup vinegar, and three tablespoons salt until the salt dissolves. Optional flavorings include two thinly sliced garlic cloves, a teaspoon of black peppercorns, and fresh dill. The cucumbers are added to the boiling brine and stirred for about one minute before removing from heat to maintain their crispness.

After cooling completely, the pickles and brine are transferred to a clean jar and refrigerated. They are ready to eat within a few hours and taste even better the next day. This quick-pickle method offers a convenient way to add a refreshing, crunchy side to any meal with minimal effort and preparation time.
