Haifa Coffee King Tal Friedman Opens New Cafe in Tel Aviv

Tal Friedman, known as "Talek" and a prominent figure in Haifa's coffee scene, has opened a new cafe in Tel Aviv, aiming to bring a different coffee experience to the city. Friedman, who operates three successful cafes in Haifa and a coffee roastery, is bringing his distinct approach to Dizengoff Street, near other well-known culinary establishments.

Friedman describes his new venture as a neighborhood cafe, reminiscent of the past, with a focus on community and connection, contrasting it with what he perceives as a trend of "sour coffee and monochromatic Nordic design" prevalent in Tel Aviv's third-wave coffee shops. He emphasizes quality and a taste that resonates with local palates, rather than strictly adhering to international specialty coffee trends.

Partnering with pastry chef Nofar Tzur and her partner Ofer Epstein, Friedman aims to offer a unique culinary experience. Tzur, who has extensive experience in pastry and has embraced a low-carbohydrate diet, is introducing a menu featuring items like "grids" made from almond flour and other low-carb ingredients, alongside traditional offerings like Russian cheese pancakes and blintzes.

Friedman, who previously worked as a teacher before entering the coffee business, sees cafes as having a vital social role. He hopes his Tel Aviv cafe will become a place for genuine interaction, similar to his successful establishments in Haifa. He plans to remain primarily in Haifa, with Tzur and Epstein managing the day-to-day operations of the new Tel Aviv location.
