Asian-Style Spiked Chicken Breasts Become Popular Summer Dish with Korean Ketchup Marinade
A recent culinary trend gaining popularity online features "hedgehog" chicken breasts, a method where chicken breast is sliced in a crisscross pattern without cutting through, allowing marinades to deeply penetrate the meat. Inspired by a Japanese recipe seen online, Israeli food writer Ins Shilat Yanai adapted the dish using a Korean ketchup-based marinade. The marinade combines mayonnaise, Korean ketchup, sriracha for heat, olive oil, garlic granules, salt, and black sesame seeds. After marinating the chicken for 30 minutes, it is roasted at 190 degrees Celsius for 25-30 minutes or air-fried for 20 minutes until browned.
