Chef Avi Levi Shares Easy One-Pot Shoulder Roast with Root Vegetables Recipe for Family Shabbat Dinner
Health and education reporter Ornit Poran Swissa from News 14 visited the show "Shabbat Flavors" with chef Avi Levi, where they prepared a tender shoulder roast with root vegetables. This rich and flavorful one-pot dish is simple and quick to make, ideal for a family Shabbat evening.
The recipe calls for a 1-kilogram shoulder roast, onions, garlic, carrots, cooked chickpeas, olive oil, and a blend of spices including cumin, paprika, hawaij, turmeric, salt, pepper, and tomato paste. The meat is seasoned and seared in olive oil, then removed while the vegetables and chickpeas are sautéed with spices and tomato paste. Water is added to cover the vegetables before placing the meat back in the center.
The key to tenderness is keeping the meat moist by regularly basting it with the sauce. The covered pot is then slow-cooked in the oven at 140 degrees Celsius for 4 to 5 hours, or alternatively at 130 degrees Celsius overnight. This "set and forget" method ensures the meat becomes very tender and infused with deep flavors.
