Avi Biton Takes Over Radler With a New Bistro Menu in Tel Aviv
Radler, the restaurant in the Alberto Hotel on Nahalat Binyamin in Tel Aviv, is beginning a new chapter after three years under the Mona group led by chef Moshiko Gamlieli. Chef Avi Biton has taken over the kitchen, expanding his partnership with the Popular group and replacing the restaurant’s previous Mediterranean direction with a classic bistro approach built on traditional techniques and deep stocks.
Biton said the move fits the area’s energy, calling Nahalat Binyamin “the beating heart of Tel Aviv.” He added that the street has a pace he has not seen elsewhere. Asked what changed at Radler, he said the place had lacked “a father” to lift the kitchen, and that he tightened the menu, made the dishes larger, and turned it into more of a restaurant. He also said the team changed the lighting and music to create “a much more accessible and pleasant” outing experience.
The new menu includes leek and corn croquettes with smoked pepper aioli for 46 shekels, mussels confit on brioche with aioli and chives for 54 shekels, broccoli salad with herbs, hazelnuts, Uzbek raisins and Parmesan shavings for 68 shekels, ricotta and spinach anolotti with sage butter for 98 shekels, chicken liver skewers with beef stock, confit potatoes and bok choy for 116 shekels, and rump steak with potato purée, beef stock and soy-cured egg yolk for 148 shekels.
Biton’s work at Radler is part of a broader expansion with Popular, which also operates Yaso in Tel Aviv. He said the group is busy with Radler, Yaso, Popular and a new project in Herzliya, where a rooftop venue is expected to open in a few months. For now, he said, the priority is to preserve, tighten and refine what they already have. Radler is located at 48 Nahalat Binyamin, Tel Aviv.
