Water Footprint of Holiday Meals Revealed
As the High Holidays approach in Israel, attention often focuses on the culinary preparations, but a recent report highlights the significant water resources required for these festive meals. The article emphasizes that household water use constitutes only about 4% of global water consumption, with the vast majority dedicated to agriculture and industry. The concept of a 'water footprint' quantifies the water invested or polluted in producing a specific product.
Producing one kilogram of beef requires an average of 15,000 liters of water, primarily for growing its feed, according to Professor Eyal Shmueli, Deputy Vice President for Research and Development at Tel-Hai University. Chicken production is considerably less water-intensive, needing about 4,300 liters per kilogram. Globally, about 27% of water use is dedicated to producing animal products. Plant-based foods have a much lower water footprint, with fruits averaging 967 liters per kilogram and vegetables around 322 liters per kilogram. However, a specific Israeli study on Medjool dates in the Arava region found a water footprint of approximately 2,450 liters per kilogram, illustrating how local climate and irrigation methods can significantly impact these figures.
The water footprint of processed items is more complex. A liter of wine requires about 870 liters of water from grape cultivation to winemaking, and a kilogram of wheat bread needs approximately 1,600 liters. A holiday meal for ten, including 1.5 kg of beef, 1 kg of fish, fruits, dates, bread, and three bottles of wine, could have a total food water footprint of around 31,000 liters, or 3,100 liters per person.
Shmueli clarifies that the water footprint doesn't necessarily mean the water is 'wasted,' as some water, like rainwater, returns to natural cycles. The metric aims to reveal the connection between consumption and water resource use. He advises that mindful consumption, starting with reducing food waste and planning meals better, is key. Moderately reducing beef consumption and increasing vegetables, legumes, and grains can significantly lower the meal's water footprint without compromising the festive experience.
