For the base: 200 g Petit Beurre biscuits, 100 g melted butter
For the cheesecake batter: 150 g white chocolate, 70 g heavy cream, 750 g 5% cheese, 1 sour cream, 220 g cream cheese, 180 g sugar, 5 eggs, 1 tablespoon cornstarch, 1.5 tablespoons vanilla pudding powder, 1 teaspoon vanilla paste (optional)
For the topping: 2 sour creams, 4 tablespoons powdered sugar
Preparation method for the perfect New York cheesecake, easy to make:
In a food processor, grind the biscuits, add the melted butter, and mix to combine. Press the biscuit and butter mixture firmly into a 22 cm pan. Add the white cheese, sour cream, cream cheese, sugar, eggs, cornstarch, vanilla pudding powder, and vanilla paste to the food processor and blend until smooth. Melt the white chocolate with the heavy cream, mix to combine, and let cool completely. Add the melted chocolate to the cheese mixture and continue blending well in the food processor until combined. Pour the batter over the biscuit base and bake for about an hour in a preheated oven at 160 degrees. To prepare the topping, mix the topping ingredients and pour over the warm cake. Chill overnight in the refrigerator and slice. Best of luck and enjoy.
