New Florentin Doner Spot Revives Authentic Turkish Street Food Tradition
Following the success of the iconic "Motpak" near Tel Aviv's Central Bus Station, Olgun Jan, son of the original founders, has launched a new Turkish street food venue called "Nibo" in the Florentin neighborhood. Unlike fast-food chains or shawarma stands that experiment with unusual sauces, Nibo focuses on authentic Turkish doner and classic kebab, emphasizing tradition and quality.
The doner at Nibo is crafted daily with a precise blend of 80% veal and 20% lamb, slowly roasted to achieve a crispy, caramelized exterior while keeping the meat tender and juicy inside. This approach honors the Istanbul street food culture by highlighting the meat's quality rather than masking it with heavy seasoning. Prices range from 55 shekels for a pita serving to 85 shekels for a plate.
The highlight of the menu is the Iskender dish, a culinary ritual featuring a base of bread cubes soaked in thick tomato sauce, topped with thin slices of hot doner, homemade yogurt, and a finishing pour of hot melted butter, served with grilled tomato and pepper. This dish, available in a kosher version, costs 85 shekels and offers a rich, authentic taste experience reminiscent of Istanbul.
