Food creator Noam Zigdon shares a recipe for no-bake peanut butter, date, and nut bars sized for a 20 to 24 cm pan. The base layer uses 500 grams of vacuum-packed natural dates, 100 grams of 70% dark chocolate, 1 teaspoon cocoa butter, 1.5 tablespoons honey, 2 heaping tablespoons peanut butter, 50 grams each of pistachios, hazelnuts, and walnuts, plus 3/4 cup rice crispies.
To make the base, melt the chocolate with the cocoa butter in short microwave bursts of 20 to 30 seconds, then mix it with the dates, honey, peanut butter, chopped nuts, and rice crispies until uniform. Press the mixture into a pan lined with cling film and flatten it well.
For the topping, melt 3 heaping tablespoons peanut butter with 1 tablespoon cocoa butter until smooth and slightly runny, then spread it evenly over the date layer. For decoration, melt 15 grams of 70% dark chocolate, transfer it to a piping bag, pipe lines across the surface, and drag a toothpick alternately up and down to create a wheat-like pattern.
The bars should be refrigerated for at least two hours until fully set, then cut with a sharp knife into squares or rectangles. The recipe appears in Poodi’s recipe booklet.
