Buttercream: 6 large egg whites, at room temperature 1 1/2 cups sugar 1/2 teaspoon salt 1/2 teaspoon instant coffee granules 2 cups unsalted butter, cut into cubes
Filling: 1 cup mascarpone cheese 2 tablespoons sugar 2 tablespoons whole milk
Espresso soak: 3/4 cup prepared strong coffee 2 teaspoons instant espresso powder 2 tablespoons Marsala wine, Kahlúa, coffee liqueur, or rum
Unsweetened cocoa powder, for decorating Optional: espresso beans and sweetened whipped cream.
2 + Preheat the oven to 180 degrees. In a small bowl, mix the sour cream, vanilla bean paste and vanilla extract until combined. Let the mixture stand for 10 minutes. Line the bottoms of three greased 23 cm round cake pans with parchment paper, and grease the paper as well. Sift together twice into a large bowl the cake flour, sugar, baking powder and salt. Add the butter and canola oil and beat until the mixture is crumbly. Add the egg whites, one at a time, about 2 tablespoons with each addition, beating well after each addition. Add the eggs, one at a time, beating well after each addition. Add the sour cream mixture and beat just until combined. Transfer the batter to the prepared pans. Bake until a toothpick inserted in the center of the cakes comes out clean, about 30 to 35 minutes. Cool in the pans for 10 minutes, then turn out onto cooling racks and remove the parchment paper. Cool completely.
In the heatproof bowl of a stand mixer, whisk the egg whites, sugar and salt until combined. Place the bowl over a large pot of gently simmering water over medium heat. Whisk constantly and heat until the mixture reaches 70 degrees, about 8 to 10 minutes. Remove from the heat. Using the mixer’s whisk attachment, beat on high speed until the mixture cools to 32 degrees, about 20 minutes. Add the instant coffee granules. Gradually add the butter, a few tablespoons at a time, and beat on medium speed until smooth.
In a small bowl, whisk together the mascarpone, sugar and milk. In a separate bowl, mix the coffee, espresso powder and Marsala wine.
To assemble: Place one cake layer on a serving plate and generously brush with the espresso soak. Spread a thin layer of buttercream. Pipe a border around the cake layer and fill with the mascarpone filling. Repeat with the remaining layers, placing the final cake layer on top. Cover the top and sides with buttercream to taste. Sprinkle cocoa powder over the top. Decorate with whipped cream and espresso beans, if desired.
