Red cabbage or kohlrabi: 1 cup chopped red cabbage (or 1 kohlrabi, peeled and grated). Carrots: 1/2 cup thin strips or carrot ribbons. Cherry tomatoes: 1/2 cup, halved. Sweet addition: a handful of unsweetened cranberries, light raisins or dried cherries. For topping, before serving: sweet potato chips or croutons. For the almond and silan dressing (yields about 2/3 cup): Almonds: the secret ingredient, 1/4 cup sliced blanched almonds, chopped. Oil: 1/3 cup canola oil or another neutral oil. Soy sauce: 2 tablespoons. Garlic: 1 crushed garlic clove (or a frozen garlic cube). Natural silan: 2 tablespoons of high-quality silan (with no added sugar). How do you make it? Step 1: Prepare the magic dressing Put all the dressing ingredients into a medium, deep bowl. Use a hand blender to blend everything together. Very important, do not blend into a completely smooth purée! The dressing should remain thick, with small crunchy pieces of almonds. Alternatively, you can give it a few short pulses in a food processor. Step 2: Assemble the layers In a large, clear serving bowl (so you can see all this beauty), begin layering: place the lettuce at the bottom. Add the red cabbage (or kohlrabi) and drizzle a little of the dressing. Continue with the carrots, cherry tomatoes, dried fruit and pecans. Drizzle the rest of the dressing on top so it seeps evenly between all the layers. Just before serving, sprinkle the sweet potato chips or croutons on top so they stay as crisp as possible. Tips that will upgrade your salad: Want to double the quantities? When doubling the dressing, it is recommended to use 1/3 cup oil and 1/3 cup water. The dressing will still come out creamy, rich and amazing, just a little lighter. Dry rule: This salad likes firm vegetables. Do not be tempted to add water-heavy vegetables like cucumbers, celery or mushrooms, so the salad does not turn soggy.
