Elad Charazi, Deputy CEO of Yohananof, stated that Israeli consumers increasingly value high-quality, uncompromising meat. The demand for meat during the High Holidays is tens of percent higher than a typical weekend, requiring Yohananof to plan its operations four months in advance. This includes managing transportation, supply, distribution timing, and augmenting staff in the butcher sections. Charazi emphasized that the process is meticulously organized, with daily inventory updates to meet the escalating demand leading up to the holidays.

Yohananof sources its premium meat from South America, specifically Argentina and Brazil, ensuring high-quality breeds and growth methods through close collaboration with suppliers. The company maintains strict quality control, freshness, and hygiene standards throughout the supply chain, including regular veterinary supervision, to guarantee food safety.

Charazi highlighted that Yohananof aims to make premium meat accessible and affordable, offering a "boutique butcher" quality at supermarket prices. This is achieved through the chain's purchasing power, allowing them to provide high-standard cuts without exorbitant costs, thus helping families manage holiday expenses. He described their butcher sections as "Yohananof's Butcher Shop," staffed by skilled butchers who provide personalized service, advice, and on-site preparation, saving customers time and effort.

Popular meat choices for the holidays include "royal shoulder roast" (number 5), beef head, tongue, and muscle (number 8) for roasts, and marbled steaks for barbecues. Classic cuts like filet mignon, ribeye, and sirloin are also in demand, alongside newer popular options like Denver cut and Iron steak. Kebabs and merguez sausages are also expected to be popular for outdoor grilling. In addition to beef, Yohananof offers a wide selection of fresh fish and poultry, including a "chicken cocktail" mix.
