Perfect Noodle Kugel Recipe for Shabbat
This recipe details how to prepare a perfect noodle kugel, a popular dish often served on Shabbat. The preparation involves several steps, starting with cooking thin noodles until they are al dente, then draining them and placing them in a large bowl.
Next, sugar is heated in a small pot until melted, at which point oil is gradually added to create a dark, uniform caramel mixture. Boiling water is then carefully incorporated into the caramel. This hot caramel is poured over the noodles and mixed quickly to ensure an even brown color.
After allowing the noodle and caramel mixture to cool slightly to prevent the eggs from cooking prematurely, eggs, salt, and black pepper are added and thoroughly combined. The mixture is then transferred to a baking dish, such as a well-greased and parchment-lined jachnun or kubana pot, or a deep baking pan. The kugel is pressed down firmly to ensure it holds its shape for slicing.
