Three Refreshing Watermelon Recipes Celebrate World Watermelon Day
August 3 marks World Watermelon Day, a perfect occasion to enjoy this quintessential Israeli summer fruit. To celebrate, three simple and creative recipes highlight watermelon’s refreshing qualities: a pink watermelon lemonade, a light watermelon and cucumber salad with feta and cashews, and a charming jelly dessert shaped like watermelon slices.
The pink watermelon lemonade combines watermelon, lemon juice, lemon zest, brown sugar, water, fresh mint, and ice, blended and strained for a smooth, cooling drink. The salad features thin cucumber strips, watermelon cubes, crumbled feta, cashews, and fresh mint, tossed in a lemon-based vinaigrette with olive oil, sugar, and salt.
The dessert uses hollowed lemon halves filled with a gelatin mixture flavored with lemon and raspberry juice, decorated with tiny chocolate candies to mimic watermelon seeds. Once set and sliced, these jelly treats resemble small watermelon wedges.
These recipes were developed by the nutrition department of the appliance brand Teka, which offers fresh, easy ideas for summer cooking. Additional recipes are available on Teka’s official Facebook page, where participants can share their results and photos.
