This recipe offers a lighter alternative to tomato sauce or heavy cream pasta, combining lemon and Parmesan for a fresh, quick dish. It is meant to be easy to make and ready in just a few minutes.
The ingredients are 250 grams of pasta, 30 grams of butter, 1 tablespoon of olive oil, 2 crushed garlic cloves, juice of 1 lemon, zest of half a lemon, 1/2 cup cooking cream, 1/2 cup grated Parmesan, salt, black pepper and chopped parsley for serving.
To prepare it, cook the pasta according to the package instructions and reserve 1/2 cup of the cooking water. Melt the butter with the olive oil in a pan, add the garlic, and after about a minute add the lemon juice, lemon zest and cream. Stir in the Parmesan until the sauce is smooth.
Add the cooked pasta and some of the reserved water until the sauce reaches the desired texture. Season with salt and pepper, top with parsley and serve hot.
